Easy stuffed baked potato’s

Well I was struggling with ideas on what to make for dinner tonight and had some baked potato’s so I decided to bake and then stuff them.  It was delicious and pretty low in syns too 😀

Serves – 2

Syns –1.5 syns per serving if using HEB for grated cheese on EE


  • 3-4 slices of bacon medalions chopped
  • 1 small onion chopped
  • 1 garlic clove chopped finely or grated
  • 1 spring onion chopped
  • 6 mushrooms chopped finely
  • 2 large baked potatos
  • 2 laughing cow light triangles – 3 syns
  • 65g half fat cheddar grated – that was all I had, you could add more or less


  • Cook potato’s in oven until cooked.  Once cooked remove from the oven and leave to cool slightly
  • In a frying pan sprayed with fry light add the onions, garlic and bacon and fry gently for a few minutes, then add the mushrooms.  Continue to cook until the mushrooms have released their water and it has evaporated
  • Once slightly cooled cut the potato’s in two and scoop the middle out into a large bowl
  • The mash the potato’s with a little bit of skimmed milk – about 2 tbsp, salt, pepper and the two laughing cow triangles
  • Once mashed add the ingredients you cooked earlier and half the cheese and stir until mixed.  Once all mixed spoon the mixture back into the potato skins and top with the remaining cheese.
  • Put them back in the oven until heated through and the cheese is melted and bubbling.
